A lot can be said about the Grašac variety. The variety has been cultivated for centuries in the wider area of Fruška Gora, as evidenced by the record in the book “The Perfect Winemaker” by Prokopij Bolić – Published in Buda in 1816. The genetic material of this variety can be found in the herbarium of the Karlovac High School from 1804, which is one of the oldest preserved herbariums in the world.
This variety is characterized by relatively long periods of vegetation. It ripens in the 3rd epoch, in the first half of October. In good years, it accumulates 22-25% of sugar, which with 6-8g of acid makes the wine of this grape have an optimal sweetness index.
Many years of work on this variety show us that the best results are obtained when the grapes reach full technological maturity. For this, dry and moderately warm weather is necessary during the ripening phase.
In such years, the vines give birth to the full potential of this variety. And the wines should be complex, full of aromas with tones of dried apricot, wax, lanolin with spicy acids and unreal fullness.
